A delicious, simple, summery mugcake for one, that makes a perfect lazy afternoon tea treat or dessert in a flash. Try serving it dressed up with a scoop of oat ice-cream or a dollop of coconut yogurt. It’s delicately spiced, moist, peachy fragrant and fruity… and it takes just a couple of minutes to make!

INGREDIENTS
80 ml (1/3 cup) ripe peach, diced
1/2 tsp coconut or birch sugar
1/4 tsp ground cinnamon
1/4 tsp ground ginger
A pinch of ground nutmeg
1 tbsp melted coconut oil
2 tbsp oat or nut milk
1/4 tsp vanilla extract
1 tbsp coconut or birch sugar
3 tbsp all-purpose flour (can be gluten-free)
1/4 tsp baking powder
DIRECTIONS
- In a microwave safe mug, combine the diced peach, 1/2 a teaspoon of coconut sugar and the ground spices.
- Microwave the fruit mixture for 30 seconds.
- Add the wet ingredients and stir to combine.
- Add the remaining dry ingredients and stir to combine.
- Microwave the cake batter for around 1-1 1/2 minutes.
- Remove the mugcake from the microwave and allow the cake to cool slightly before serving.
*Coconut yogurt, flaked almonds, peach slices, vanilla oat milk ice-cream and/or syrup are all lovely additions for serving, but entirely optional!
