My husband’s birthday was a simple affair this year. After a long day/week in the office he decided that a visit from his close family, some take-away food and a comfy spot on the couch were all that he wanted in the way of a birthday celebration. I, on the other hand, think that no birthday celebration is complete without something sweet, hence jumping online to find this recipe (after discovering 2 bags of chocolate chips in my cupboard… mmm).
CHOCOLATE-FILLED CHOCOLATE CUPCAKES
Prep Time: 30 Min, Cook Time: 18-25 Min (depending on cupcake size)
INGREDIENTS:
375 g all-purpose flour
400 g white sugar
65 g unsweetened cocoa powder
1 tsp salt
2 tsp baking soda
160 ml vegetable oil
475 ml water
2 tbsp vinegar
2 tsp vanilla extract
200 g cream cheese (1 packet), softened
1 egg
100 g white sugar
1/4 teaspoon salt
100 g white chocolate chips
50 g dark chocolate chips
DIRECTIONS:
- Preheat oven to 175 degrees C. Line muffin cups with paper liners*.
- In a large bowl, mix together flour, 400 g sugar, cocoa, 1 teaspoon salt and baking soda. Stir in oil, water, vinegar and vanilla until blended. Pour mixture into prepared muffin cups, filling each 2/3 full.
- To make the filling: In a medium bowl, beat together the cream cheese, egg, 100 g sugar and 1/4 teaspoon salt until light and fluffy. Stir in chocolate chips. Drop 2 heaped teaspoons of the cream cheese mixture into each cupcake. Bake in the preheated oven for 18-25 minutes (depending on cupcake size). Allow to cool before serving.
* I used my IKEA Drömmar muffin tin and muffin cups for the first time. The resulting cupcakes were very cute and a perfect party size and form.

I just got those tins from IKEA, so cute! Was wondering how much to fill them and bake times. Thanks for this info. Your recipe sounds yummy, printing this out 🙂

Hi Michelle! I made these so long ago it’s hard to be certain of the fill level, but I usually fill cupcake cases 3/4 of the way. As for baking times, try doing a test bake of 1 cupcake in your Drömmar tin, fill the case 3/4 and bake for 18 minutes. I usually do a test bake before popping the whole tray of filled cases in if I haven’t tried the recipe before… all ovens are different so you may need to do some tweaking. But I hope this will work for you! 😀 Thanks for stopping by!
