This was one of those we-don’t-have-much-time-but-we-have-lots-of-leftovers kind of meals! We had butternut squash remaining after making North African Squash & Chickpea Stew the other day, some veggie bacon bits in the freezer that needed to be used (yep, fake bacon!), a handful of mushrooms and a few other bits and pieces. We picked up one of those DIY pizza kits (with ready-made dough that you simply roll out and a jar of pizza sauce), roasted the squash, caramelised the onion and let our little L become our kitchen helper for the evening. He was thrilled to help spread the sauce on the pizza base and place the toppings. He also loved “taste testing” each topping (and then placing the licked/half chewed item back on the pizza… we are not “precious” about such things in this household, luckily ;))
ROASTED BUTTERNUT SQUASH PIZZA
INGREDIENTS:
1 pizza kit (with ready-made dough and sauce) or homemade pizza base if you’re more ambitious
1 onion, caramelised
1/2 butternut squash, cubed then roasted for approx. 20 minutes, drizzled with olive oil
A handful of veggie bacon bits
Some roasted semi-dried tomatoes, chopped
Some organic mushrooms, chopped
A couple of handfuls of organic cheese (vegan cheese, by all means, if you like)
Cracked black pepper
A sprinkle of dried oregano
DIRECTIONS:
Preheat oven. Assemble pizza as you like. Bake according to pizza kit directions (approx. 20 minutes or until base is golden brown and toppings lovely and bubbling). Eat!
*Almost “anything goes” on a pizza, it seems! But this combination was a lovely balance of semi-sweet, savoury and salty 🙂

Thank you :)! It was very tasty :). The roasted squash was kind of a necessity as we needed to use it up, but I love sweet potato and pumpkin on pizza too, so I figured squash would work nicely. x

I just made this wonderful pizza for dinner–HUGE hit! I had butternut squash sitting around and no plans to use it anytime soon, so it was perfect timing! I had mushrooms but forgot to add them–a little upset about that. Thanks for the great idea!
