If you’ve been following this blog, you may be aware that I am currently taking part in the Chopra Center 21-Day Meditation Challenge™, Creating Abundance. One of the weird spin-off effects from doing this is that it seems I inevitably drift off at some point and start fantasizing about food and, more specifically, healthy food! I don’t know if this is my body taking the opportunity to drop hints whilst I am particularly open to receiving them or whether Deepak is sending me subliminal messages about nutrition ;), but I have been inspired nonetheless.
And so, Project Pinterest, week 5 will have a focus on food; yummy, homemade, comfort-type food (the kind I like!) with a veggie/vegan/gluten-free/sugar-free twist.
To kick-start this week, I have ingredients ready to go for the following:
Sweet Potato Vegan Burgers
Healthy, Delicious Fruit & Oat Cookies (vegan, gluten-free AND sugar-free… is it possible?)
Chia Coconut Pudding with Tropical Fruit
Roasted Butternut Squash Pizza
I will also be attempting to make a greeting card (you know, in that “scrapbooky” kinda way that people do these days 😉 ) for my dear cousin.
And of course I’ll be continuing with my ongoing projects like pregnancy journal writing, meditation, crocheting, etc.
