Mini Quiches are quick, easy and delicious. They are perfect for entertaining for many reasons, including their size, versatility and the fact that they can be made in advance yet still served warm and toasty from the oven on the day of your event! I was thrilled to experiment with both of these recipes in preparation for my blessingway/baby shower and have modified them to, what I consider, perfection. So here’s a double whammy post of mini Quiche awesomeness!
VEGGIE BACON AND MUSHROOM MINI QUICHES
Prep time: 10 minutes | Cook time: 15-20 minutes | Serves: 24
2.5 dl of veggie bacon bits, cooked
1/2 large onion, diced and sautéed
3 large champignon mushrooms, diced and sautéed
1 dl tasty cheese, grated
2 puff pastry sheets
A dash of garlic salt
A sprinkle of dried parsley
Salt & pepper to taste
A dash of milk or cream
- Pre-heat your oven to 180 degrees C.
- Grease 2 cupcake trays (12 cup) with olive oil or butter.
- In a bowl, mix the eggs, veggie bacon, mushrooms, onion, cheese, salt, pepper, garlic salt cream & parsley with a fork until well-combined.
- Using a glass or pastry cutter, cut circles out of puff pastry and place into the greased cupcake tray holes.
- Spoon the mixture into the pastry.
- Bake in the oven for 15 – 20 minutes or until golden brown.
*Mini Quiches freeze well too! Try freezing 12 in a single layer in a medium-sized freezer bag.

I love quiche too! Never made a full-sized one myself, but these little ones are very easy… and yummy. I love cooking vegetarian food which is why pretty much every recipe I post is veggie-inclined 🙂 So happy you like this one 🙂

These look delicious! I can’t wait to make these mini quiches when I host Easter brunch next week! If I make them ahead of time and freeze them, what temperature do you suggest I reheat them at and for how long should they reheat coming from the freezer? Thanks!
mmmarzipan says
Hi Laura! Thanks lots for the comment and question! Ok, well I would suggest preheating the oven at 180 C-ish (or 350 F) and popping the frozen mini quiches in on a baking paper-lined tray for around 15 minutes (though check them after 10). Taste test one to make sure it’s perfectly warmed through, if you can. It’s tricky with ovens as they are all a little different, but I do hope that will work for you. Have a fab brunch! 🙂 x

These turned out amazing!! So many of my friends and family asked for the recipe so these delicious quiches have been quite popular at some of our brunch events! Thank you again 🙂
