SUPER-EASY, CHEESY BISCUITS (AKA how to transform pesky puff pastry scraps into yumminess)

My perfectionist tendencies have meant that over the past couple of weeks I have been testing all the recipes of dishes I plan to serve at the blessingway/baby shower. I recently experimented with two types of mini quiches made with puff pastry and, as a result, had a bunch of puff pastry scraps that I had no idea what to do with, but couldn’t stand to waste. I found this recipe online and it seemed just the ticket. It is truly one of the easiest things I’ve ever made… and these biscuits are so yummy and more-ish. I won’t ever waste a scrap of puff pastry again! 😉




200g pastry off-cuts (puff or short crust)
100g grated cheddar cheese


  1. Mould scraps of pastry into a ball and roll out.
  2. Sprinkle one half with grated cheese and fold the other half over the cheese.
  3. Roll this out and keep on folding and rolling until the cheese is well mixed in with the pastry.
  4. Roll out well-mixed cheesy pastry to a thickness of about 0.5 cm and cut out biscuits with a small cookie cutter. Bake on tray lined with baking paper in a preheated oven at 200c (180c fan) for approx. 10-12 minutes or until golden brown.
  5. Allow to cool and store in an airtight container or put the biscuits in a bag in the freezer. Reheat in oven as needed.

How easy is that?! 😀

  1. I made quiches today . I wish I had seen this earlier then I could have made these cuties instead of strange little pastry shells.

    • Oh, you made quiches too? Great minds think alike 😉 I hope you post about them! I have only been trying mini quiches and have never tried making a full-sized quiche. Must do 🙂

      • There are some wonderful quiche recipes. I have a favourite that doesn’t require a separate base; it is self crusting. I suppose that is a cheating quiche.

  2. Approximately how many cut outs can you get from one recipe? I am going to try these for a drop in on Saturday. There will be 40 in attendance. Thanks for the wonderful idea.

    • So sorry for missing this comment earlier! I hope you did give them a go and that you liked them. To answer your question, I used a very small cutter and recall that I was able to fill a couple of decent sized tupperware containers. So perhaps using a smaller cutter you could get enough mini biscuits to serve 40 people (assuming there are other snacks on hand too). I really depends on the size of the cutter you are using. And of course if yo want LOADS of them, you could always add another sheet or two of puff pastry to the mix, with equivalent weight of cheese. All the best! 🙂
